Korean Chili Flakes, or Gochugaru, have a rich, deep, and minerally aroma that smells peppery and bold and, oddly enough, like sun-dried tomatoes. Their taste is sweet and almost sticky, with a touch of smoke. These flakes measure between 4,000-8,000 units on the Scoville Heat Scale, so the heat is present but not overwhelming.
Use in standard Korean dishes or to make Gochujang. Mix with rice, toss on pasta, or try on scrambled eggs. Great on chicken wings too!
